We're all hearing more about ways to help bring more nutrition into our kitchens, and reduce the level of processing in commercial foods. One area gaining interest is natural food dyes, which provide brilliant colors and potential health benefits without the synthetic ingredients. While many companies still grapple with making this switch, you can easily incorporate natural dyes into your home cooking for a safe and creative touch.


The Benefits of Natural Food Dyes  

Natural food dyes are not just about aesthetics; they offer all sorts of advantages:

  1. Safer Choices: Unlike synthetic dyes, which have been linked to health concerns such as allergies and hyperactivity, natural food dyes are generally regarded as safer options, especially for those with sensitivities.

    • Purple Cabbage: High in anthocyanins, this vegetable provides antioxidant benefits.

As seen in the case of Mars Incorporated's efforts to phase out artificial colors from products like Skittles and M&Ms, expectations vary widely among consumers based on product type and region. While some areas embrace natural ingredients in candy, others remain indifferent.

It will be a long time before major companies break into the natural colors- but as they see the market get more comfortable with the natural shades, and demand more of it- they'll come around. Start at home, and help contribute the ideas that work!


Using Natural Food Dyes at Home  

You can easily bring these colorful alternatives into your kitchen. Here’s how to use natural food dyes creatively:

  1. Red Coloring with Beetroot: To create a bright red dye, juice raw beets or blend and strain them. If you prefer a powder form (great for baking), freeze-dry the beets and grind them into a fine powder.

  2. Playful Pinks: For a bright pink hue, try grinding freeze-dried raspberries or strawberries. These fruity powders can add a splash of color to frostings or baked goods.

  3. Fresh Greens: Blend or juice spinach or kale for a refreshing green tint in smoothies and pasta dishes. Matcha green tea powder is another fantastic choice for an earthy green shade.

  4. Natural Orange Dye: Juice carrots to extract a naturally sweet orange dye perfect for muffins or cakes.

  5. Golden Yellow Options: Turmeric is an excellent source for achieving a rich golden color. You can also steep saffron threads in warm water for an elegant yellow hue or use golden beets for softer tones.

  6. Deep Purple Dye: Simply boil purple cabbage in water to create a rich purple dye that adds visual appeal to any dish.


Tips for Enhanced Color Impact

  • Add Acids for Brightness: Incorporating an acid like lemon juice can brighten certain hues—adding it to purple cabbage dye can shift the color to a vivid magenta!

  • Balance Flavor with Color: It’s crucial to use only enough dye to achieve your desired color without compromising flavor. For baked goods, adjust other liquid ingredients if adding a liquid dye or balance powders carefully in gluten-free recipes.

Here is one of my favorite ways to use the natural colors-


Fun Recipe: Rainbow Pancakes  

Bring some color and creativity to your breakfast table with these vibrant Rainbow Natural Dye Pancakes! Perfect for weekends or special occasions, this recipe utilizes various natural food dyes to create stunningly colorful pancakes that are as nutritious as they are beautiful.

Ingredients:  

    For the Pancake Batter:

    • 1 cup all-purpose flour (or gluten-free flour blend)

    • 1 tablespoon baking powder

    • 1 tablespoon sugar (optional)

    • 1/2 teaspoon salt

    • 1 cup milk (dairy or plant-based)

    • 1 large egg

    • 2 tablespoons melted butter or oil


    Natural Dye

    • Pink Dye: 2 tablespoons freeze-dried raspberry powder

    • Green Dye: 2 tablespoons spinach juice (or blended spinach)

    • Yellow Dye: 1 teaspoon turmeric powder (dissolved in warm water)

    • Purple Dye: 2 tablespoons purple cabbage juice (or boiled cabbage water)


Instructions:  

  1. Prepare Natural Dyes:

    • Extract juices from beetroot, spinach, and purple cabbage by blending the vegetables with a little water and straining through a fine mesh sieve.

    • Mix turmeric powder with warm water until dissolved.

    • Set all dyes aside.

  1. Make Pancake Batter:

    • In a large bowl, combine flour, baking powder, sugar (if using), and salt.

    • In another bowl, whisk together milk, egg, and melted butter/oil.

    • Pour the wet ingredients into the dry ingredients and stir until just combined—do not overmix.

  1. Coloring Your Pancakes:

    • Divide the pancake batter into five separate bowls.

    • Add each natural dye to one bowl of batter, stirring until you achieve your desired color intensity.

  1. Cook Pancakes:

    • Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.

    • Pour about 1/4 cup of each colored batter onto the skillet and cook until bubbles form on top (about 2-3 minutes). Flip and cook for another minute until golden brown.

    • Repeat with all colored batters, stacking pancakes as they’re done.

  1. Serve:

    • Serve your rainbow pancakes warm with maple syrup, fresh fruit, yogurt, or any toppings you love!
